Mendocino Farms, the elevated fast casual known for turning sandwiches, salads and more into an unexpected culinary adventure, celebrates the fresh ingredients and good vibes of the season with new limited-time dishes. Starting Tuesday, May 21, guests can sink their teeth into the new spicy Street Corn Chicken Sandwich and satisfying Sweet Peach & Goat Cheese Salad, along with fresh new deli sides.
“We live for giving our guests an exciting culinary experience to look forward to, exploring fresh ingredient combinations and new ways to add our unique Mendo twist to our menu throughout the year,” said Mendocino Farms Executive Chef Jeremy Bringardner. “Our Street Corn Chicken Sandwich features all the flavors of street corn and tacos al pastor together in one craveable sandwich, while the Sweet Peach & Goat Cheese salad has the perfect refreshing ingredients for lazing by the pool or picnicking in the park. The summer adventures our guests can take with these dishes are endless.”
🥪 Chef’s Latest Creations
Mendocino Farms’ limited-time Street Corn Chicken Sandwich features al pastor chicken over creamy street corn, with roasted peppers & onions, pickled red onion, tomatoes, shredded romaine, cilantro, and jalapeno salsa verde on a toasted sesame roll. Chef Bringardner has continued to innovate on this savory sandwich, making a few tweaks to the al pastor marinade to make it more authentic, inspired by recent travels to Mexico.
For guests who enjoy the craveable combination of both sweet and spicy flavors, Mendo is introducing the Sweet Peach & Goat Cheese Salad, made with shaved, roasted chicken breast, sweet peaches, a drizzle of hot peach honey, marinated goat cheese, honey roasted almonds, pickled red onions, fresh mint, shaved fennel, romaine, kale and mixed greens, and served with farmhouse vinaigrette.

New deli sides inspired by summer barbecue spreads are also joining the limited-time menu, including the brand-new Couscous Tabbouleh with Mint Labneh featuring roasted sweet corn, couscous, tomatoes, cucumber, red pepper, dill and jalapeno-mint labneh. Mendo is also bringing back its Oaxacan Potato Salad, Southern Macaroni Salad, Summer Corn Chowder and Chicken Tortilla Soup. Later this season, the beloved Mendo fan-favorite Summer Heirloom BLT will join the party on July 9 once Heirloom tomatoes have hit their peak season.
